Mini Egg Crunch Loaded Cookies

Cookie Recipe: makes 6-7
- 125g butter
- 110g light brown sugar
- 60g caster sugar
- 1 medium egg + 1 yolk
- 1 tsp vanilla extract
- 220g plain flour 
- ½ tsp baking powder
- ½ tsp bicarb
- ½ tsp salt
- 100g milk chocolate
- 75g dark chocolate

Crunchy Cornflake Recipe:
- 200g milk chocolate
- 1 tbsp chocolate hazelnut spread
- 80g cornflakes
- 75g mini eggs

Method:

1. Beat together the room temperature butter, light brown sugar, caster sugar, vanilla extract and salt until smooth and combined.
2. Add the egg and egg yolk, then mix again until fully incorporated.
3. Add the plain flour, baking powder and bicarb, mixing until just combined without overworking the dough.
4. Chop the milk and dark chocolate into chunks, fold into the dough, then divide into 6-8 dough balls.
5. Freeze for at least 2 hours or overnight.
6. Preheat the oven to 180°C (160°C fan) and place the dough balls on 2 lined trays with plenty of space between them as they will spread.
7. Bake for 15-18 minutes until the edges are set but the centres are still soft, then leave to cool on the tray without touching as they will firm up while setting.
8. Meanwhile, melt the milk chocolate with the chocolate hazelnut spread, then fold in the cornflakes and roughly chop the mini eggs.
9. Spoon the topping over each cooled cookie, finish with crushed mini eggs, and leave to set before serving. #cookies #minieggs #recipe

Chicken Fajita Pie Recipe

It’s still cold here in the UK so imo comfort food season is still in full swing so thought I’d share this again, SO many of you have recreated this and loved it, it’s def a winner. There’s just something about breaking through a golden, flaky pastry to a rich, creamy filling that feels SO cosy.

Recipe: Serves 4-5
- 600g chicken breast/thigh
- 2 tbsp oil
- 4 cloves garlic, minced
- 1 tsp oregano
- 1 tsp dried parsley
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika 
- 1 tsp red chilli flakes, optional
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 1 tsp salt, or to taste
- 1 tbsp tomato purée 
- 1 red pepper
- 1 green pepper
- 1 red onion
- 35g plain flour
- 400ml chicken/veg stock
- 150ml double cream
- 1 tbsp fresh coriander, chopped
- 50g shredded mozarella, optional
- 1 sheet puff pastry
- Egg wash, optional

Method:
1. Heat the oil in a pan over medium heat. Add the chicken, garlic and all the spices. Cook for about 5 minutes until the chicken changes colour.
2. Stir in the tomato puree, peppers and onion. Cook for another 5 minutes until slightly softened.
3. Sprinkle over the flour, stir well and cook for 2-3 minutes to get rid of the raw flour taste. Gradually add the stock, stirring until thickened, about 4-5 minutes.
4. Mix in the cream and coriander, then remove from the heat. Taste for salt and adjust accordingly. Leave to cool completely.
5. Transfer to an ovenproof dish (or keep in the same pan if oven suitable). Scatter over mozzarella if using, then cover with puff pastry.
6. Brush with egg wash and bake in a preheated oven at 180C for 20-25 minutes until golden. Rest for 10 minutes before serving.
7. Serve with either mash, veg, chips or salad and enjoy. #pie #potpie #fajita #easyrecipes
