INDO-CHINESE VEG & PANEER HAKKA NOODLES RECIPE

Easy and all in one pan, noodle yumminess just for you.

🌱 Ingredients (to preference & taste):
- oil
- paneer or you can use firm tofu (cubed)
- onion (sliced)
- garlic (sliced)
- ginger (minced)
- chillies (optional)
- mushrooms (cut into bite size pieces)
- pepper/capsicum (cubed)
- frozen sweetcorn 
- tomato ketchup 
- sriracha sauce or your favourite chilli sauce 
- soy sauce
- rice wine vinegar (optional - just a dash)
- bean sprouts 
- hakka noodles or any other noodles you like (cooked as per pack instructions)

🥢1. Heat a little oil in a wide pan/wok, once hot add the paneer, just as the paneer turns golden, add the onions, ginger, garlic and chillies.
🥢2. Lower the heat and mix everything together, once the onions start to brown add the mushrooms and let them brown too.
🥢3. Add peppers and sweetcorn. Mix and make space in the middle to add all of your sauces and rice wine vinegar.
🥢4. Mix and cover with a lid on a low heat for 10 minutes, mixing halfway. 
🥢5. Add noodles and bean sprouts, heat through and serve.

✨ You can really use any veggies - use the ones you like, the ones you have in and leave out the ones you don't like or have. If you don't have fresh, just bung in some frozen ones. ✨

EASY EGG FREE PANCAKES RECIPE

Keep the pancakes simple and zhuzh them up with any toppings you fancy.

🌱Ingredients (makes approx 15 pancakes)
- 300g self-raising flour
- 1 tsp baking powder
- 1 tbsp sugar (add more if you prefer sweeter)
- 1 tsp vanilla extract
- pinch of salt
- 1 tsp ground mixed spice or use a mixture of ground cinnamon, ginger and nutmeg (optional, but gives a nice subtle flavour)
- 1 tbsp sunflower oil
- 400ml milk (plus more if needed)

🥞1. Mix the flour, baking powder, sugar, vanilla extract, salt, ground spice in a bowl using a whisk.
🥞2. Add the oil and slowly pour in the milk and whisk until you have a smooth, thick batter. Add more milk if you want a slightly thinner batter.
🥞3. Place a ladle of the mixture onto a crepe maker or non stick pan and cook the pancakes on both sides until fluffy and brown. You can use a little butter or oil to cook the pancakes if you like.
🥞4. Serve with toppings of choice.

AIR FRYER MIXED VEGETABLE PAKORA / BHAJIYA RECIPE

As the kids get bigger and are now eating adult portions, I love this air fryer upgrade. With multiple cooking functions and an extra-large 11L capacity, thanks to a removable divider, the air fryer is fantastic for batch cooking and making speedier, larger family meals.

🌱Ingredients (makes approx 12 pakora):
- 2 medium potatoes (grated)
- 1 large carrot (grated)
- 1 medium onion (finely chopped)
- large handful chopped spinach
- handful chopped coriander
- 1 tbsp ginger (minced)
- 2 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala or to taste
- 1 tsp ground red chilli or to taste 
- salt to taste
- 4 tbsp chickpea/besan flour
- 2 tbsp rice flour
- juice of 1 lemon 
- oil for brushing
- 1/2 tsp soda bicarbonate

🌱1. Add ingredients to a bowl in order of the above (except the soda bicarb), plus 4 tbsp of cold water - you don't need much, water will also release from the veg.
🌱2. Mix well with your hands and leave to stand for 10 minutes. 
🌱3. Add soda bicarb and mix again.
🌱4. Place small batches of the batter into the air fryer.
🌱5. Brush the top with oil and air fry for 15 minutes at 190° or until the top of the pakora have started to brown and are firm enough to turn over without falling apart.
🌱6. Turn the pakora over and lightly oil the top. Turn up the temperature to 200° and air fry again until the pakora have crisped and browned to your preference. Serve hot with chutney or sauce.
