Does celery get the love it deserves in your kitchen?

Inspired by @love.celery I've decided to Cook more French and I've created this delicious celery soup because celery is a key ingredient in lots of French dishes.

This soup would make a lovely starter or even a light main if you serve it with some crusty bread.

To make my French inspired soup you'll need:

1tbsp cooking oil
1 onion, finely diced
4 sticks celery, sliced
1-2 garlic cloves, crushed
1 large potato, peeled and diced
600ml vegetable stock
Salt and pepper
Drizzle of double cream to serve (optional)
Croutons or other soup toppings to serve (optional)

Heat the oil in a large saucepan. Gently cook the onion, garlic and celery for about 5 minutes. Add the potatoes and stock and simmer for 15 minutes or until the potatoes are cooked.

Blend with either a stick blender or transfer the soup to an immersion blender. Season well and serve.

Drizzle the bowl with double cream and top with croutons.

AD I've really started enjoying easy wraps for lunch at the moment and this is my simple sundried tomato egg salad in a @fitbakes wholegrain tortilla wrap.

The egg salad is two hardboiled eggs, 1 tbsp Greek yoghurt and 1tsp sundried tomato paste. I also put some lettuce in the wrap.

Don't just have sweet pancakes for pancake day! Savoury ones are actually my favourite and these creamy leek and black pudding ones are a real winner if you're a fan of black pudding. And if you're not? Well, you can make them with ham, bacon or chorizo instead.

I used my lovely blue Swan retro frying pan from @swanbranduk to make the pancakes in. I just love the colour and if you want to get one too, I'll put a link in my stories.

For the pancakes I used 100g plain flour, 2 eggs and 300ml of milk.

To make the filling I used:

1 onion, finely diced
270g leeks, sliced
100g black pudding, diced
100ml double cream
100ml stock (I used vegetable stock)
Salt and black pepper

Fry the onion and leeks until softened. Add the black pudding and continue to fry for another 5 minutes. Pour in the double cream and stock, season and continue to cook for about 5 minutes.

Serve the creamy leek and black pudding with the pancakes.

AD I think tinned fish often gets forgotten about which is a shame as it makes such a great ingredient for an easy lunch wrap like this one!

The fish was piri piri tinned mackerel so had loads of flavour and I also added radishes and rocket.
