Recipe for low(er) sugar banana bread:

3 overripe bananas
2 eggs, beaten
60g unsalted butter, softened 
80g full fat Greek yogurt 
1 tsp vanilla extract 
25g maple syrup or honey 
140g plain flour 
3 tsps baking powder 
1 tsp cinnamon 
Large handful of seeds / 2tbsps ground flaxseed (optional) 

Method:
- preheat oven to 160 fan
- mash the bananas and set to one side 
- mix the butter, yogurt, maple syrup and vanilla extract together 
- slowly add the beaten eggs, adding a little bit of flour to help combine 
- in another bowl mix the flour, seeds, baking powder and cinnamon 
- combine the wet and dry ingredients, then add the bananas and fold in 
- line a loaf tin with parchment and add the mix in 
- bake in the oven for around 45 -50 mins until cooked in the middle - check after 30 mins and cover with foil if the top it browning too much

This sauce can be made in bulk and frozen, and then used for pasta, a base for bolognese or even a pizza base. It contains 5 different vegetables so it is perfect for ticking off your 5-a-day!
You can leave it unblended, or blend it (this is especially handy if you have fussy toddlers). 

Ingredients:
1 red onion 
4 carrots 
1 leek
2 red peppers (fresh or jarred roasted)
1 garlic clove 
2 tsps oregano 
2 tsps thyme 
2 bay leaves 
2 tbsps tomato puree
2 tins chopped tomatoes 
400ml water

Method:
- chop all the veg into small chunks 
- heat 2 tablespoons of oil in a large pan and then cook the veg on a medium heat for about 15 mins
- add the garlic, tomato puree and herbs and cook for 1 min 
- add the chopped tomatoes and water  
- bring to a simmer, cover and cook for around 30 mins until the veg is soft and the sauce is reduced 
- take off the heat and blend with a stick blender 
- eat straight away or freeze for a later date!
